  • 2 stalks lemongrass (bruised)
  • 4 kaffir lime leaves (shredded)
  • 2 cups thick coconut milk (from 1 grated coconut)
  • 1 cup thin coconut milk (from 2 grated coconuts)
  • 2 turmeric leaves (shredded) - optional
  • Salt, sugar and pepper to taste

Instructions:

  1. Heat up some oil and saute the lemongrass and kaffir lime leaves until fragrant.
  2. Add in the chicken pieces and stir until half cooked.
  3. Add in the tamarind juice mixture and stir until well mixed.
  4. Pour in the thin coconut milk and turmeric leaves (optional). Stir well.
  5. Cook on medium heat until the chicken is fully cooked and the coconut milk has reduced.
  6. Add in the thick coconut milk and season with salt, sugar and pepper. Cook on low heat and stir occasionally until the gravy thickens and the chicken is tender.
  7. Serve hot with some steamed rice.
