- 1 tablespoon minced ginger
- 1 tablespoon minced onion
- 2 tablespoons Korean red pepper flakes (gochugaru)
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 2 teaspoons salted shrimp, minced
For the lobak putih:
- 250g white radish, peeled and grated
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon sesame oil
For the batter:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 egg
- 1 cup cold water
- 1 tablespoon vegetable oil
Now onto the recipe itself.
Instructions:
1. First, make the kimchi filling. In a large bowl, mix the chopped cabbage with 1 tablespoon of kosher salt. Let the mixture sit for about 2 hours, until the cabbage releases its water. Rinse the cabbage under cold water and drain well.
2. Add garlic, ginger, onion, Korean red pepper flakes, fish sauce, sugar, and salted shrimp to the cabbage. Mix well until the cabbage is coated with the seasoning. Cover and let the mixture ferment at room temperature for at least 2 days.
3. Now let's make the lobak putih. In another bowl, merge the grated white radish, cornstarch, salt, sugar, and sesame oil. Mix together until fully combined.
4. Next, make the batter. In a medium bowl, whisk together the flour and baking powder. Add the egg, cold water, and vegetable oil. Continue to mix until fully combined.
5. Pour the batter into the bowl with the white radish mixture. Stir well.
6. Preheat the oil in a deep fryer or a large pot to 180°C.
7. Take a spoonful of the lobak putih batter and add a tablespoon of kimchi filling in the center. Seal the mixture by rolling it into a ball. Repeat until you run out of mixture.
8. Deep fry the lobak putih balls until they turn golden brown, about 5-7 minutes. Drain on paper towels.
