Hey guys, have you ever tried Laksa Johor? If you haven't, you're missing out on one of the most delicious dishes in Malaysia! I recently stumbled upon this amazing recipe for Laksa Johor, which I'm excited to share.

Ingredients:

  • 500g spaghetti
  • 2 tbsp cooking oil
  • 150g shallots, peeled and sliced
  • 100g garlic, peeled and sliced
  • 2 stalks lemongrass, bruised
  • 10 dried chillies, soaked in hot water until soft
  • 10 fresh red chillies, sliced
  • 2 tbsp belacan (shrimp paste)
  • 1 litre chicken stock
  • 500g mackerel tuna, sliced into 4cm chunks
  • 300 ml coconut milk
  • Bunga Kantan (ginger flower), sliced
  • Daun kesom (Vietnamese mint), shredded
  • 1 cucumber, sliced
  • 5 pieces of prawn fritters, sliced
  • 2 hard boiled eggs, halved
  • Calamansi limes, halved
  • 1 cup of bean sprouts, blanched

Instructions:

To make the laksa paste, blend shallots, garlic, lemongrass, dried chillies, fresh chillies and belacan until fine. Heat oil in a wok and fry the paste until fragrant. Add in chicken stock and bring it to a boil.

Add in the mackerel tuna and let it cook for about 5 minutes, or until it's cooked through. Then, add the coconut milk and give it a good stir. Add in the ginger flower and Vietnamese mint, and give it a good mix. Season with salt and sugar to taste.

In a pot of boiling water, cook the spaghetti until al dente. Drain and rinse with cold water. Divide the noodles into 4 servings.

Place cucumber slices, bean sprouts, sliced prawn fritters and halved hard boiled eggs on top of the noodles. Pour the laksa gravy over the noodles and garnish with calamansi limes. Serve and enjoy!
