Instructions

  1. In a large bowl, whisk together the egg yolks and 2 cups of coconut milk until combined.
  2. In a saucepan, combine the remaining 2 cups of coconut milk, sugar, and salt over medium heat. Cook until the sugar has dissolved, stirring occasionally.
  3. Add the egg mixture to the saucepan and continue cooking, stirring continuously, until the mixture has thickened and coats the back of a spoon.
  4. In a small bowl, mix together the cornstarch and water until combined.
  5. Add the cornstarch mixture to the saucepan and continue cooking, stirring continuously, until the mixture has thickened even more.
  6. Remove from heat and stir in the vanilla extract.
  7. Pour the mixture into a large mold or individual ramekins and let cool to room temperature. Then refrigerate for at least 3 hours or until set.
  8. To serve, invert the mold onto a plate and garnish with your choice of fruits or nuts.
